How to… make delicious carrot cake

Carrot cake is awesome! And a must to have here in Sweden.

But always getting one in one of the many nice cafés can be quite expensive - especially here in Lund or probably in whole Sweden.

But here is the solution: DIY - and get a really delicious cake - even better than the really great one at Coffee Point here in Lund ;-)

Here’s what you need:

  • 250 g very soft (nearly liquid) butter
  • 375 g sugar
  • 3 egs
  • 250 g carrots, grated
  • 1 tbs vanilla sugar
  • 625 g flour
  • 2 tbs baking powder
  • 2 tbs cinnamon
  • 1 tbs baking soda
  • ¾ tbs salt
  • 125 g chopped/grounded nuts (e.g. almonds, hazelnuts, both…)
  • 250 ml milk

And here’s how to do it:

Mix the butter with the sugar with an electric mixer and add the eggs, the grated carrots and the vanilla one by one. Then mix the dry ingredients (flour, baking powder, baking soda, salt and cinnamon). Give this mixture bit by bit, together with the milk, to the butter-sugar-mix. Mix everything and then add the nuts and mix it again.

Give everything in a baking form and put it in the oven for around 40 minutes at 180°C. When the cake is ready, let it cool down and cover it with vanilla frosting.
